Nasi Lemak

Hello,
Today I would like to share the recipe of my favourite traditional Malay food called as Nasi Lemak.



Here the recipe :

Ingredients:

  • 1 Cup Rice,(washed and drained) 
  • 2 Cups of Coconut Milk
  • 1 Pandan Leaf, (tied in a Knot) 
  • 1/4 Teaspoon Salt


  • Ingredients for Sambal:

    • 50g Dried chilies, softened in water and pounded/grounded finely
    • 50g Shallots / Onions
    • 1 tsp shrimp paste
    • 2 tsp Tamarind Juice 



    Ingredients for Garnishing :
  • 2 Hard-Boiled Eggs,(cut in wedges). 
  • 2 Tablespoons Ikan Bilis,(deep-fried till crisp). 
  • 1 Piece Yellow Bean Curd,(deep-fried & sliced thinly). 
  • 1/4 Cucumber,(sliced thinly).
  •  2 oz Kangkong,(scalded)   

  • Ways to do :

    1) Wash and clean the rice and put it in a small pot. Add the coconut milk and the Pandan Leaf and bring to the Boil. 
    2) When the rice begins to boil, lower the heat. 
    3) Simmer gently for 10 -15 minutes until all the water has been absorbed and remove from the heat. 
    4) Loosen rice grains with chopsticks. Cover up and allow rice to cook in its own heat for 10-15 minutes.
    5) While the rice is cooking, prepare the Garnishing and Sambal.
    6) For the Sambal, heat oil and fry the shallots/onions until slightly brown.
    7) Add the Chilies and shrimp paste and fry until fragrant. Fry for 2 - 3 minutes.
    8) Add Sugar, Salt and Tamarind Juice. Allow to cook for another 4-5 minutes and serve.
    9) Serve the rice with the Sambal and other Garnishing.

    Additional tips:
    You can serve your Nasi Lemak with Fried Chicken, Fried Egg or Omellete.

    Resepi Kentang Putar dan Sos Kentang Putar



    CARA-CARA MEMBUAT KENTANG PUTAR


    Bahan-bahan ( 10 biji kentang )

    • 10 biji kentang di buang kulit dan di potong kiub ( besar2)
    • 1 sk lada hitam di tumbuk halus
    • 1/2 cawan fresh milk
    • garam secukup rasa

    Cara-cara

    1. Rebus kentang dgn sedikit garam
    2. Setelah empuk toskan air dan tumbuk sedikit supaya hancur
    3. Kemudian guna hand mixer putar sehingga kentang jadi halus.
    4. Sambil putar , sambil masukkan garam, lada hitam dan susu secukupnya.

    CARA-CARA MEMBUAT SOS KENTANG PUTAR


    Bahan-bahan ( 3 - 4 orang )

    • 650 ml air
    • 5 sudu besar stok ayam (Saya guna brand Maggi)
    • 1 biji bawang besar - cincang
    • 1 batang saderi - cincang
    • 40 gm mentega
    • 20 gm tepung gandum
    • 1 sudu besar sos tomato
    • 1 sudu besar sos tiram
    • sedikit serbuk lada hitam
    • kicap pekat
    • garam

    Cara-cara

    1. Masak air dengan stok ayam,saderi dan bawang besar hingga mendidih.Renihkan dalam 10 minit.Tapis ke dalam mangkuk.
    2. Cairkan mentega dan masukkan tepung gandum.Kacau atas api kecil hingga tak melekat pada tepi periuk.
    3. Tuang air rebusan sedikit demi sedikit sambil dikacau supaya tak bergentel.
    4. Masukkan sos tomato dan sos tiram, juga beberapa titik kicap pekat (kicap utk bagi warna).Masukkan juga serbuk lada hitam dan garam.
    5. Masaklah ikut pekat mana yg disukai.(#NOTE: rasa dulu baru letak garam sbb stok ayam dan sos tiram dah masin.#)

    Homemade Fondant Cake

    Bahan-bahan ( Hiasan utk 1 biji kek )

    • 63 ml air
    • 1 sudu besar gelatin halal (guna produk Halalgel)
    • 125 ml sirap glucose
    • 1 1/2 sudu besar gliserin
    • 2 sudu besar lemak sayur (shortening)
    • 1 kg gula aising (Ayaq dulu)
    • Pewarna pilihan

    Cara-cara

    1. Kaedah double boiled akan digunakan utk membuat fondant ni. Bekas tahan panas diperlukan utk proses memasak.
    2. Tuang air ke dalam bekas dan masukkan gelatin. Kacau dan ketepikan (lebih kurang 1min) supaya gelatin kembang.
    3. Double boiled bahan td. Kacau gelatin sehingga larut.
    4. Kemudian masukkan glucose, gliserin & shortening ke dlm bahan yg sudah larut td. Kacau sehingga semuanya larut.
    5. Setelah semua bahan larut. Tutup api dan biarkan bahan td sejuk atau suam2 gitu.
    6. Setelah bahan suam2 kuku, masukkan sedikit demi sedikit gula icing dan kacau sehingga sebati (lebih kurang 500gm gula, doh akan keras sedikit. Proses menguli boleh diteruskan menggunakan breadmaker atau teruskan dgn uli menggunakan tangan)
    7.  Doh yg sudah siap akan jadi seperti gambar ni. Warna putih.
    8. Biarkan doh semalam utk hasil yg lebih baik. Simpan dalam bekas yg kedap udara. Boleh simpan didalam suhu bilik.
    9. Seterusnya, proses mewarnakan doh. Bahagi doh kepada beberapa bahagian. Titiskan sedikit sahaja pewarna sehingga dpt warna pilihan hati.
    10. Akhir sekali proses membentuk doh. Harap semua faham bagaimana utk menghasilkan fondant icing. 

    Simply Lasagna

    Resipi Lasagna
    • 8-10 keping kulit lasagna
    • 300g daging cincang (kite guna ayam)
    • 1/2 biji bawang besar holland – cincang
    • 2 ulas bwg putih – cincang
    • 1 tin sos spaghetti original
    • 3 sudu besar tomato puree@ 2 biji tomato cincang
    • 1/2 biji carrot – potong dadu (optional)
    • 3 biji cendawan butang – hiris nipis
    • 1 sk oregano
    • Air
    • minyak zaitun
    • garam, gula secukup rasa
    • keju mozarella secukupnyer
    • UNTUK SOS PUTIH
    • 1/2 cawan tepung gandum
    • 2 1/4 cawan susu segar
    • 1/3 cawan keju pilihan
    • 3 sudu besar butter
    • lada hitam, garam
    • Rebus kulit lasagna instant mengikut arahan peket. (hana rebus dengan sedikit minyak) Tapi ada jenis lasagna yg tak perlu direbus. Kemudian ketepikan.
    • Panaskan minyak zaitun, tumis bawang putih dan bawang besar hingga naik bau. Masukkan daging. Kacau hingga daging bertukar warna. Masukkan pula tomato puree@tomato cincang. Masak hingga tomato hancur. Kemudian masukkan sos spaghetti, carrot, mushroom, oregano, garam dan gula secukup rasa. Masukkan sedikit air jika kuah terlalu pekat. Masak hingga mendidih dan ketepikan.
    • Utk membuat sos putih , satukan semua bahan dan kacau di atas api yg kecil hingga pekat.
    • Sediakan mangkuk yg bersesuaian utk membakar. Susun kulit lasagna, kemudian sapu rata sos daging… sapu pula sos putih dan taburkan keju mozarella (jika inginkan rasa cheese yg lebih pada setiap lapisan. Jika tak nak ltk pong tk mengapa.) Lapiskan lagi dengan kulit lasagna dan ulangi proses tadi hingga habis. dan last skali adalah sos putih. taburkan keju dan sedikit daun parsley jika suka.
    • Bakar pada suhu 200′C selama 40-60min  atau hingga permukaan lasagna keperang2an. Boleh dimakan sejuk atau panas.

    Homemade Chicken Burger


    Chicken patty

    500g minced chicken
    1 onion, finely chopped
    3tbsp fresh breadcrumbs
    3tbsp fresh milk
    1/4tsp white pepper powder
    1/4tsp black pepper powder
    1/4tsp chicken stock powder
    1tsp salt or to taste

    plain flour - enough for coating
    1 egg - lightly beaten
    Fresh breadcrumbs - enough for coating

    1. Mix fresh breadcrumbs and milk in a mixing bowl, set aside for few minutes.
    2. Fry the onions till soft, and mix into minced chicken.
    3. Add the rest of ingredients and seasoning, mix till well combine, form into patties.
    4. One by one, dip patties in plain flour, next coat in beaten eggs, then transfer to breadcrumbs and coat thoroughly.
    5. Pan frying with little oil until golden brown on both sides. Drain on paper towels.


    Burger buns (combine au Lait and water roux method)

    "Water roux starter" method:-

    50g High protein flour/bread flour
    250g water

    1. Combine water and flour in a saucepan, cook over low flame and keep stirring till become thicken and no lumps left, the texture is something like baby porridge.
    2. Remove from heat and cover loosely with plastic wrap to prevent from drying. Store the starter in the refrigerator after completely cooling down for later use.

    Burger dough (combine au Lait and water roux method):-

    450g High protein flour/bread flour
    55g sugar
    1/2tsp salt
    170g fresh milk (cold)
    40g egg white (from 1 large egg)
    1 and ½ tsp yeast
    50g butter (soften in room temp)
    100 water roux starter

    Some poppy seeds
    1 egg (egg wash)

    1. Put all the ingredients except butter in a mixing bowl, knead until become a smooth dough.
    2. Add in butter, and knead till smooth and elastic, takes about 10mins.
    3. Let it proof for 60mins in a clean bowl cover with cling wrap.
    4. Remove dough from the bowl, punch out the air, equally divide into smooth round shape, rest for another 20mins.
    5. Apply egg wash and sprinkle some poppy seeds.
    6. Bake at a pre-heated oven at 180c for 25mins.
